There are two opposing schools of methodology: the one ties the sandwich – filled with cheese, tomato and onion – with string like a parcel; the other wouldn’t dream of it. Why not treat everyone to your own recipe on National Braai Day on 24 September and make the most of this authentic South African celebration!

Braaing Rule No. 1

BRAAI SMOKE IS ONLY ATTRACTED TO BEAUTIFUL PEOPLE!

If you are blessed with good looks it is safer to stay indoors and make a delicious salad. We recommend any of the following to accompany the perfectly cooked meat – fresh tomato, mozzarella and basil salad, beetroot and butternut with avo or brown rice salad with aubergines and almonds.

Braaing is a direct form of energy use, from the coals, to your meat. With conventional electricity there is a lot spillage between the power plant, power lines, electricity box, wires, stove and pan. If you love the earth – braai!

Doing It Right

When sparking your grill make sure you set up the coal like the Egyptians (set up your coal in a pyramid). Now you have to use your math skills, insert three firelighters evenly, yes EVENLY! into the pyramid and light em up.

Leave for 20 to 30 full minutes, the flames should have died down at that point…and if you have followed these instructions- the charcoal should have turned white. If you get this far you are almost done… now spread the charcoal more evenly around the barbecue rack using a barbecue tool.

The bbq is now ready…but wait! While we can give you some tips…here is where the bbq master inside you has to come out! Our tips are this:

1. Wait for the flames to die down..

2. Don’t cover all of the base of the rack with charcoal..

3. Get your beer ready.. the last thing you need is to have to decide whether to get a beer or let the food burn!
